this weekend, B and i visited the Alabama Farmer's Market. we bought a ton of fresh veggies and fruit. one of the main things i love about summer is peaches. so i decided that i wanted, no needed to make a peach cobbler. so i did.
Paula Deen's Peach Cobbler
Ingredients:
4 cups peeled, sliced peaches (if you don't care about the skin, i wouldn't bother peeling. it was a pain)
2 cups sugar, divided
1/2 cup water
8 tablespoons butter
1 1/2 cup self-rising flour
1 1/2 cup milk
ground cinnamon, optional
To make:
* Preheat oven to 350 degrees F
* Combine the peaches, 1 cup of sugar, and water in a saucepan and mix well. Bring to a boil and let simmer for 10 mins. Remove from heat.
* Put the butter in a 3 qt baking dish and place in oven to melt.
* Mix remaining cup of sugar, flour and milk slowly to prevent clumping. Pour mixture over melted butter. Spoon fruit on top,gently stirring in syrup. Sprinkle top with ground cinnamon, if using. Bake for 30-45 minutes. Serve with plain vanilla ice cream or whipped cream.

we also got a ton of fresh, home-grown food. check out our meal below, all veggie. fried okra and squash, with beans and tomatoes... great summer meal.
